I was first introduced to this wholesome, filling, nutritious & delicious recipe by Alessandra Alfredo, a Healthy Chef and Nutrition researcher a few years back, and since then I have prepared it many times for family and guests (quite often not mentioning the fact it is vegan nor the interesting, unusual ingredients it contains), as well as at retreats and cooking demonstrations.
